Spring has sprung — and that calls for healthy sweet treats to help fuel more glorious sunny outdoor adventures! Who hoo! These Choc Almond Energy Bites are the perfect on-the-go snack or impromptu picnic treat when you or your little ones need a fibre-rich, low sugar treat to help keep blood sugar levels as sunny and stable as a mild Spring day.
Just a quick note: the decadent Belcolade chocolate coating will hold outside the fridge, but direct sunlight (or a warm lunchbox) will result in a sticky chocolate ‘mess’ (which is not necessarily a bad thing in my books). Go ahead and skip this step if you would like to use them to your little one’s school lunch box without creating that mess — their teacher will thank you!
I’m rather proud that this is probably the shortest ingredient list I have managed so far. I always try to keep my busy mommy friends in mind when I put together a recipe. I hope you love it as much as we do.
Choc Almond Energy Bites
Makes 16 bites
Combine all the ingredients in a large mixing bowl until it forms a large ball.
Roll the nut butter dough into a large snake.
Cut into 16 small pieces.
Gently roll into little balls and place on a silpat-lined tray.
Refrigerate while you melt your chocolate over a bain marie (that’s over a pot of warm water for the non-french speakers ;-).
Scoop teaspoon-fulls of the melted chocolate over the balls.
Top with cocoa nibs (or sprinkles).
Keep refrigerated in an air tight container.
